Garden Veggie Egg Whites Omelette

recipe omelette



1 cup egg whites

1/4 cup chopped onion

1/4 cup chopped green bell pepper

1/2 cup chopped tomato

1/2 potato cut lengthwise

Mint leaves



Spray the skillet with cooking spray. Add the veggies for about 5 minutes on medium heat. Season with salt, pepper, and lemon juice. When crisp, remove from the skillet.

Add the egg whites, lift edges to make it easy to remove with the spatula.

Spread the vegetables on one side of the omelet, add mint leaves for taste, fold it.

Add cheese on top of the veggies if you like (cheddar, haloumi, mozzarella)
