Shrimps & Kale Sesame Noodles

Ingredients:

  • Noodles (I chose Bare Naked Noodles, zero fat, low in calories)
  • 2 tbsps extra virgin olive oil
  • 1 1/2 cup quartered white mushrooms
  • 2 cups stemmed kale
  • 3 small zucchinis sliced
  • 1 cup frozen shrimps
  • 1/4 reduced salt soy sauce
  • 1 tbsp organic peanut butter
  • 1/4 cup sesame oil
  • 1 tbsp sesame seeds

Directions:

  • In a skillet, add 1 tbsp of olive oil on medium high heat. Put in the shrimps and sauté  for around 5 minutes until they are well cooked, stirring frequently
  • Take out the shrimps, set aside
  • Add 1 tbsp olive oil and 2 tbsps water to the skillet. Add the mushrooms, zucchinis, and the kale. Stir fry for 3 minutes
  • For the sauce, whisk well together the peanut butter, soy sauce, and the sesame oil. Add it to the pan, with 1 tbsp of sesame seeds
  • Add the noodles to the pan after taking out all the water from the sealed bag they were in
  • Cook, tossing all the ingredients for 2-3 minutes
  • Pour the food in a bowl, add the shrimps on top et voila
