Pineapple Shrimp With Brown Rice

(Serves 4)

Ingredients:

  • 1 cup brown rice
  • 1 tsp olive oil
  • 1 lb peeled shrimps
  • 1 cup chunks of fresh pineapple
  • 3 large chopped scallions
  • 1 tomato
  • 1 cup of corn
  • 2 tsp soy sauce (reduced salt)
  • 2 tsp sesame oil
  • Cilantro and dried cranberries for garnish

Directions:

  • Cook brown rice (1 cup of rice for 2 cups of water), set aside
  • While it’s cooking, take a pineapple and cut it in half, taking out the fruit in order to make a bowl. Cut the inside into chunks, and set aside
  • In a nonstick wok on medium high heat, add the olive oil, shrimps, and cook for about 7-10 minutes, take them out
  • In that same pan, sauté the scallions, corn, pineapple chunks. Add the sesame oil and the soy sauce, and stir for about 5 minutes. Add the shrimps into the pan, and mix for another few minutes. Add the rice and mix all together
  • Place in the hallowed out pineappled, and garnish with cilantro and cranberries
