Balsamic-Glazed Salmon With Spinach & Mushrooms

  • 1 salmon fillet
  • 1 clove garlic, minced
  • 1 cup fresh or frozen spinach
  • 5 mushrooms, sliced
  • 2 tomatoes, chopped
  • 1 tbsp olive oil
  • 2 tsp honey
  • 1 tsp Dijon mustard
  • 1/3 cup balsamic vinegar
  • 1 tbsp sweet basil
  • Salt and pepper to taste


  • In a skillet on medium high heat, add olive oil and the garlic, mix for a few minutes. Add the mushrooms and keep for 3-5 minutes until lightly brown and soft
  • Add chopped tomatoes for another few minutes then season with the sweet basil, salt, and pepper
  • Add the spinach, balsamic vinegar, mustard, and the honey. Close the lid and keep on medium high heat for 3-5 minutes. Take it out and place it on a plate
  • In the same skillet, add the fillet and grill the salmon, skin fown first, for 5-8 minutes on each side until grilled to your liking. Place it on top of the spinach mix
  • I added lemon juice and dried cranberries on top
