The bread I used is a high fibre seed batch but you can of course use any toasted loaf of your choice or even baguette.
- Peanut Butter + Banana + Blueberries: I love love love (I would add more “love” but I wouldn’t want to annoy you) the classic combination of organic peanut butter and chopped banana. It provides the perfect balance of proteins, fats and carbs that will keep you energized for very long hours. I added blueberries on top for extra antioxidants. Also, how cute does that toast look?
- Ricotta Cheese + Fried Egg: One half cup serving of whole milk ricotta cheese has 14 g of protein. This is 28 percent of your daily value of protein. It is also a great source of calcium. You can substitute the fried egg with solely egg whites.
- Ricotta Cheese + Strawberries: Try to incorporate strawberries to your meals. I even top my salads with strawberries. It is an excellent source of antioxidant, dietary fiber, potassium, omega-3 fatty acids and has many more health benefits.
