Balsamic Glazed Baked Salmon

(Serves 2)


  • 2 salmon fillets
  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • 4 tbsp balsamic vinegar
  • 2 tbsp white wine (you could substitute it for lemon juice or vegetable stock)
  • 1 tbsp honey
  • 1 tbsp dijon mustard
  • Salt & pepper to taste
  • 1 tbsp fresh rosemary


  • In a medium saucepan, combine the wine, balsamic vinegar, honey, dijon mustard, rosemary and garlic. Let it heat over medium-high heat until it boils (around 8-10 minutes). When it does, lower to medium-low heat, and keep it until it thickens for another 8-10 minutes – whisk occasionally

  • Season the salmon fillets with salt and pepper on both sides, place them on the foil-lined baking sheet (pour the olive oil on the sheet before placing the fillets). Brush them with half the balsamic mixture, sprinkle with rosemary and place them in the oven. Bake for 10-15 minutes

  • When you take them out, brush the fillets with the remaining glaze, and serve them to your liking. I chose a side of fresh spinach, walnuts, and blueberries.
