Super Food Bowl with Lemon-Tahini Sauce

This super food bowl is one of the most delicious meals I have ever made! When making a super food bowl the ingredients are really up to you (add super-foods and roast veggies of your choice). Below is a recipe that I put together, it serves two

For the Super Bowl:


  • 1 large sweet potato, chopped into 3/4 –inch cubes
  • 1 can chickpeas, drained and rinsed
  • 1 bunch kale
  • 1 cup of chopped beets
  • 1 cup quinoa
  • 1/2 avocado


  • Preheat oven 240 C and line a large baking sheet with parchment paper
  • Place the chopped sweet potato, broccoli, and the chickpeas. Drizzle 1 tablespoon of oil and toss the veggies until they are all coated. Sprinkle with salt and pepper and add your preferred spices (for example pick one or as many of the following: chili powder, cayenne, garlic powder, cumin)

  • Place the sheet in the oven and roast for 20 minutes. Take them out, toss them around, and place them back for another 20 minutes
  • During that time, cook the quinoa after rinsing (1 cup for 2 cups of water) When the cooking is over, spread the quinoa on a large plate and add 1 table spoon of olive oil. Keep them out for about 30 minutes

For the lemon-tahini sauce:


  • ¼ cup tahini
  • 2 garlic cloves
  • ½ cup fresh lemon juice (about 2 lemons and a half)
  • 3 tbsp extra virgin olive oil
  • 1 tbsp chopped parsley
  • Salt & pepper to taste
  • 4 tbsp water


  • Place all the ingredients in a food processor. If it is too thick, add a little more water
