Blueberry-Banana Oatmeal Bread

I LOVE a recipe that is delicious, filling, and sweet without all the guilt that comes with it. This guilt-free snacking banana-blueberry oatmeal bread is just what anybody needs.

Ingredients:

  • 2 cups whole wheat flour
  • 1 ½ tablespoon baking powder
  • 1 tablespoon cinnamon
  • ½ cup brown sugar
  • 2 ripe bananas (mashed)
  • 1 ½ cup fresh blueberries
  • 2 eggs
  • 1 tbsp vanilla extract
  • 1 cup almond milk
  • 1 cup oatmeal
  • 2 tablespoons chia seeds (this is optional. I personally love adding chia to a lot of my recipes. It provides a kick in antioxidants and fiber)

Directions:

  • Preheat oven to 350 degrees. Grease with coconut oil and flour a loaf pan
  • In a large bowl, mix the flour, baking powder, cinnamon, chia seeds, and half of the oatmeal (so ½ cup)
  • In another bowl, beat the eggs, vanilla, sugar, milk until just blended. Stir in the bananas and the blueberries. Add the other ingredients from the large bowl and stir
  • Pour batter into the prepared loaf pan. Add the remaining oatmeal on top. Bake for one hour. Cool in the pan for 10-15 minutes before removing the loaf
