Basil Caprese Chicken


  • 2 tbsp coconut oil
  • 2 cloves garlic
  • 2 boneless, skinless, chicken breasts
  • 1 ½ cup cherry tomatoes cut in half
  • Fresh, low fat mozzarella cheese, sliced in ½ inch slices
  • 3-5 basil leaves
  • 1 tbsp oregano
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste


  • After cleaning the chicken breasts with water and lemon juice, place them on a large sauté pan with 1 tbsp of coconut oil. Marinate them with salt, pepper, and oregano. Grill chicken for about 6-8 minutes on each side over medium-high heat (until they are cooked thoroughly). Place aside

  • In the same skillet, add one tbsp of coconut oil and the garlic and cook for 2 minutes. Add the tomatoes, keep sautéing them for 5-8 minutes over medium-high heat

  • Stir in the basil leaves (how YUMMY does it smell??)

  • Place back the chicken breasts on the skillet, top them with mozzarella slices and let the mozzarella melt for about 3-5 minutes

  • Place them on a platter, drizzle with balsamic vinegar, and serve
