Fattoush Salad

fattoush Absolutely delicious! Such a colorful dish; the sumac and pomegranate molasses make this salad super rich in flavor.

Dressing:

(Serves 5)

  • 2 tablespoons ground sumac (before use, soak them for 20 minutes in warm water)
  • 1 garlic clove (crushed)
  • 3 tablespoons pomegranate molasses
  • 4 tablespoons fresh lemon juice
  • 3/4 cup extra-virgin olive oil
  • 1 tablespoon white wine vinegar

Combine all the ingredients in a bowl, whisking constantly until wel blended. The dressing is really up to you. If you feel like it needs more lemon, or more vinegar, do not hesitate to add a little more. You could always adjust the seasoning

Salad:

  • One pita bread, toasted in the oven, and torn into pieces
  • 3 tomatoes (chopped)
  • 4 cucumbers (quartered lengthwise)
  • 4 scallions (thinly sliced)
  • 1 head romaine lettuce (cut crosswise)
  • 1 ½ cup parsley leaves
  • 1 cup fresh mint

Mix the ingredients in a large bowl, add dressing and gently toss. Season with salt and pepper to taste. Finally, add the pita pieces on top, and serve. 

For protein, I had the fattoush salad with a side of basil-grilled chicken breasts
