Whole-Wheat Oatmeal Pancakes With Strawberry Sauce

It is so hard to imagine pancakes that can be healthy and tasty at the same time. I personally love pancakes; the fluffier the better. I don’t like to deprive myself from anything since I don’t believe in dieting; I believe in a healthy lifestyle that lasts forever. And that means I can have comfort food once in a while! However, since I love to experiment in the kitchen, I always try to make comfort food that are healthy. So far, every recipe I’ve made has been successful (hallelujah). I managed to bake those light, soft, moist, and FLUFFY whole wheat oatmeal pancakes. All it took is the right balance of ingredients and voila !

(This recipe makes around 10 pancakes)

For The Pancake Batter

Ingredients:

  • 1 cup whole wheat flour
  • 3 egg whites
  • 1 tablespoon cinnamon
  • ½ cup quick oats
  • 1 cup milk (you could use soy or almond milk if you prefer)
  • ½ cup Greek yogurt
  • 1 ½ tablespoon baking powder
  • 1 tablespoon vanilla extract

Directions:

  • In a large bowl, toss the cinnamon, baking powder, flour, and oats

  • In another bowl, beat the milk, eggs, brown sugar, vanilla, and yogurt. When there aren’t any lumps left, pour what’s in that bowl in the one that has the dry ingredients. Mix gently (do not use a blender. You don’t want to over stir the ingredients)

  • Over medium high heat, place 1 tablespoon of extra-virgin olive oil, and start pouring the pancake batter into the pan. It should take around 1 minute on each side before flipping it to cook the other side

For The Strawberry Sauce

Ingredients:

  • 2 cups fresh strawberries (washed, stems removed, cut in half or roughly chopped)
  • 2 tablespoons brown sugar
  • 1 teaspoon vanilla

Directions:

  • Combine the ingredients in a saucepan. Cook over medium high-heat stirring occasionally

  • When it boils, lower the heat to medium-low

  • Mash the strawberries with a wooden spoon, and cook until the sauce thickens (it should take around 15 minutes)

Serve the pancakes with the sauce, adding extra strawberry slices on top. DELISH!
