  • After threading the chicken and the veggies onto the skewers, and brushing them with olive oil, place them in the pre-heated oven over 160 degrees for about 15 minutes. Halfway, rotate the skewers to get both sides (if you’re going to use a grill, it should take a little less time)

  • 1 container fat-free Greek yogurt
  • 1 large cucumber – peeled, and chopped
  • 1 garlic clove – minced
  • Juice of half a lemon
  • 1 tbsp fresh parsley
  • 1 tbsp fresh dill
  • 1 tbsp extra-virgin olive oil
  • Salt and pepper to taste

  • Place the cucumber chunks in a colander, sprinkle with salt and pepper, and allow to rest for 15 minutes. Then place them in a food processor, add in the parsley, the dill, and the garlic clove. Then pour the Greek yogurt into the food processor for only 10 seconds (you don’t want it to be too liquid). Pour it in a bowl, and whisk for a few seconds. Garnish with extra parsley
