Greek Yogurt Strawberry-Banana & Chia Bread

Greek Yogurt . Strawberries . Bananas . Chia seeds –> All in one recipe? Yes please!

It really is amazing how the healthier version of a recipe can taste even better than the traditional, high caloric one

For this breakfast/snack/dessert recipe, I have replaced sour cream with Greek yogurt, butter and oil with ripe bananas, regular flour with whole-wheat flour, and I have added chia seeds for more fiber, omega-3, and extra crunch

I also sprinkled dark chocolate chips on top of the bread when it was still warm because

1) Life is too short

2) A little dark chocolate never hurt nobody

3) I’m a little obsessed with it #noshame

So Moist, So Fluffy, So Delicious

Ingredients

  • 2 cups whole-wheat flour
  • 1 tablespoon baking powder
  • 2 eggs
  • ¾ cup cup brown sugar
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 3/4 cup Greek Yogurt
  • 3 large ripe bananas – mashed
  • 1 ½ cup fresh (or frozen) strawberries – sliced
  • 2 tablespoons of chia seeds

Directions

  • Mix the following ingredients in a bowl: the flour, baking powder, salt, and chia seeds. Stir well to combine

  • Using a cutting board, slice the strawberries into small pieces, and mash the ripe bananas with a fork

  • In a separate bowl, combine the brown sugar, eggs, vanilla, yogurt and the mashed bananas. Beat until fully combined. Then add the strawberries in that same bowl, and stir just a little

  • Add the mixture of the first bowl to the one of the second bowl together and mix smoothly until half way combined. Do NOT over mix

  • Pour batter into a desired pan after you coat it with coconut oil, and a little flour. Place strawberries cut in half on top after you have poured the batter into the pan. Bake at 350F for 50-60 minutes. Make sure to insert a wooden pick and don’t take the cake out until the pick comes out clean

  • Cool for 15 minutes and remove it from the pan. If desired, sprinkle with dark chocolate chips on top and serve
